Marcus Wareing makes a custard tart from his grandmother’s recipe on MasterChef: The Professionals 2014. Marcus also made the dessert from the same recipe for her Majesty the Queen on her eightieth birthday.
Marcus says: “The way I look at it there are only three things, a pastry case, the custard it self and the nutmegs.”
For his tart base, Marcus used short crust pastry that has been rested and ready for rolling. Once rolled and lined in the tin he fills the pastry with rice and then blind baked in the oven.
For the custard filling, Marcus mix egg yolks, caster sugar and warm cream.
The five chefs in week 2 of MasterChef: The Professionals 2014 must show what they can do with the ingredients to impress Marcus Wareing to have a chance of making it through to the quarter-final of the competition.
